Cookie Challenge Recipe #1 CHOCOLATE!

Today I was able to bake my first choice for my Cookie Challenge, and I must say it was a success! The husband just kept saying "These are amazing!". He even requested I make them to bring to his fams house on Thanksgiving! On to the goods...

Dark Double Chocolate Cookies

These cookies were dreamy...rich and decadent, kind of crunchy on the outside (once they cooled), but still gooey on the inside. Perfection!

I did not alter the recipe much, but here it goes. Info directly from Baking Bites site with my notes blue:


Dark Double Chocolate Cookies Ingredients
1 1/4 cups all purpose flour
1/2 cup cocoa powder (Ghiradelli brand is great)
1/2 tsp baking soda
1/4 tsp salt (next time I would use a little less)
1/2 cup butter, room temperature
1 cup sugar
1 large egg
1 tsp instant espresso powder (optional) - (I did not add this)
1 tsp vanilla extract
1 1/4 cup semisweet or dark chocolate chips (I did 1.5 cups, 1./2 semi-sweet, 1/2 white chocolate chips, Ghiradelli brand...because in my opinion they are the best!)

Preheat oven to 350F. Line a baking sheet with parchment paper.
In a medium bowl, sift together flour, cocoa powder, baking soda and salt.
In a large bowl, cream together butter and sugar. Beat in egg, followed by vanilla extract. Gradually, with the mixer on low speed, blend in the flour mixture, stopping when no streaks of dry ingredients remain. Stir in chocolate chips.
Place rounded tablespoons of dough (about 1-inch balls) onto prepared baking sheet.
Bake for 10-12 minutes, until cookies begin to crack on the top.
Cool for 2 minutes on the baking sheet, then transfer to a wire rack to cool completely.
Makes 2 1/2 dozen (My completed round made 33 cookies!)

YUM! Such a great and super easy recipe to make. I was able to whip these up in less than hour just in time to make it to the gym to burn some calories to eat them!

Now on to pick my next recipe while eating these! This could be dangerous...
