Yesterday J and I made Snickerdoodles. We tripled the recipe cuz J wanted to make some for her dad for Christmas as a gift. The recipe says it makes 24 if you make 1 in. balls. They lie! We ended up with about 9 dozen! So J took quite a few and wrapped them all up for her dad. And I have 4 1/2 dozen here and she took the rest home with her to take to her church last nite. She was going to something at the youth group, a huge cookie and cocoa party.
I had 4 baking pans going all afternoon that held about a dozen each pan. I remembered that last yr. I made some Vanilla sugar so for the topping we mixed the Vanilla sugar and cinnamon. I thought it would add an extra flavor boost. They are yummy!
I know most of you probably have a good Snickerdoodle recipe but Ill post the one I used here anyway.Soft Snickerdoodle Cookies
* 1 cup butter
* 1 1/2 cups sugar
* 2 large eggs
* 2 3/4 cups flour
* 2 teaspoons cream of tartar
* 1 teaspoon baking soda
* 1/4 teaspoon salt
* 3 tablespoons sugar
* 3 teaspoons cinnamon
Preheat oven to 350°F. Mix butter, 1 1/2 cups sugar and eggs thoroughly in a large bowl. Combine flour, cream of tartar, baking soda and salt in a separate bowl. Blend dry ingredients into butter mixture. Chill dough, and chill an ungreased cookie sheet for about 10-15 minutes in the fridge. Meanwhile, mix 3 tablespoons sugar, and 3 teaspoons cinnamon in a small bowl.
Scoop 1 inch globs of dough into the sugar/ cinnamon mixture. Coat by gently rolling balls of dough in the sugar mixture. Place on chilled ungreased cookie sheet, and bake 10 minutes. Remove from pan immediately. Makes 24
